Creamy mashed potatoes with white truffle oil

Few recipes show the power of truffle as well as good mashed potatoes. It is a humble dish made with simple ingredients, yet a few drops of Valle Trufa white truffle oil turn it into a restaurant-worthy side. The silky potato and the butter are the perfect carriers for the aroma of white truffle.

Ingredients (4 people)

  • 800 g floury potatoes
  • 100 ml whole milk, hot
  • 60 g cold butter, diced
  • 2-3 teaspoons white truffle oil
  • Fine salt and a pinch of nutmeg
  • Fresh chives, chopped, to garnish

Step by step

1. Cook the potatoes

Peel the potatoes and cut them into pieces of similar size so they cook evenly. Put them in cold salted water and simmer for 20-25 minutes, until a knife slides in without resistance. Starting in cold water stops the outside falling apart before the centre is cooked.

2. Dry and mash

Drain well and return the potatoes to the pan for a minute over low heat to steam off any excess water. Pass them through a food mill or potato ricer. Avoid an electric blender: it breaks down the starch and makes the mash gluey.

3. Add the butter and milk

Add the cold butter and stir vigorously until it melts. Then add the hot milk little by little until you reach the texture you like. Season with salt and a pinch of nutmeg.

4. The truffle touch, always at the end

Just before serving, off the heat, add the white truffle oil and fold it in gently. White truffle is not cooked: the heat of the mash is enough to release its aroma, while direct heat would kill it.

5. Serve

Serve hot, make a small swirl with the back of a spoon, add an extra drizzle of truffle oil and finish with chopped chives.

Tips for perfect mash

  • Go easy: start with two teaspoons and taste. White truffle is intense and it is easy to overdo it.
  • For more intensity, replace some of the butter with white truffle butter.
  • Festive version: grate a little Parmesan with white truffle on top.
  • Leftovers: reheat with a splash of milk and add the truffle again when serving.

What to serve it with

This mash is wonderful with grilled red meat, a fillet steak, roast chicken or baked white fish. It pairs well with a medium-bodied red or a barrel-aged white.

Which oil size should I choose?
