Many customers ask us whether white truffle oil can replace fresh truffle. The short answer: they complement each other, they are not substitutes. Each has its moment, its use and its price, and knowing the differences will help you get the most out of both.
Fresh white truffle
Fresh white truffle (Tuber magnatum) is one of the most exclusive ingredients in the world. It is only available from October to December, and its aroma is the most intense and complex of all truffles.
- Experience: the most authentic. It is shaved raw over the dish in front of the diner.

- Price: high, because it is scarce and cannot be cultivated.
White truffle oil
White truffle oil is extra virgin olive oil flavoured with white truffle. It is available all year round and gives a concentrated, stable aroma.
- Experience: the aroma of truffle at any time of year, with just a few drops.
- Shelf life: it keeps for months if protected from light and heat.
- Price: affordable, so you can use it every day.

When to use each one
Fresh truffle

White truffle oil
For everyday cooking, for dishes with many guests, for when the season is over, or to give a touch of truffle to simple recipes: purées, eggs, pasta, pizza or carpaccio.
Both together
In season, many cooks use both in the same dish: a few drops of oil to perfume the base and shavings of fresh truffle on top. The oil reinforces the aroma without stealing the truffle's spotlight.
One shared rule
Neither fresh white truffle nor its oil is cooked. Both are added at the end, raw, over the hot dish. Heat destroys the aromatic compounds that make white truffle unique.
