Recipe: Salmon and Black Truffle Tartar

The summer truffle season, if climate change allows it, I say this because it is crazy what it is affecting, both truffle growers and distributors, we are going crazy, with the tastings and the shortage of summer truffle in Europe. Sorry, I’m going off on a tangent hehe… we were talking about the summer truffle season, which runs from May to September. Ingredients Salmon, avocado and summer truffle tartar from Valle Trufa Mallorca
Here’s a recipe for a delicious salmon, avocado and black truffle tartar:
Ingredients:
- 250 grams of fresh salmon
- 1 ripe avocado
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- Juice of half a lemon
- Salt and pepper to taste
- 1 teaspoon of black truffle sauce
- chopped fresh chives (optional, for garnish)
Instructions:
- Cut the salmon into small cubes and place in a bowl.
- Peel and cut the avocado into cubes the same size as the salmon. Add to the bowl.
- In a separate bowl, mix the soy sauce, sesame oil and lemon juice. Pour this mixture over the salmon and avocado.
- Add salt and pepper to taste and mix gently to combine all ingredients.
- Cover the bowl with cling film and refrigerate for at least 30 minutes to allow the flavours to blend.
- Before serving, add the black truffle sauce and mix again.
- Garnish with freshly chopped chives and serve the salmon tartar, avocado and black truffle sauce on individual plates.
