The Perfect Christmas Menu with Truffles
We've designed a five-course menu that incorporates our truffle products in a balanced way, creating a memorable dining experience without being overwhelming. Each dish shines on its own, but together they create a symphony of flavors that your guests will remember for years to come.
Appetizer: Board of Truffled Cheeses with Honey and Dried Fruit
Start the evening in style by presenting our Truffle Cheese Pack on a spectacular gourmet board.
Ingredients:
Truffle Cheese Pack (Gorgonzola with black truffle, Parmesan with white truffle, Pecorino with black truffle), freshly baked artisan bread, assorted seed crackers, caramelized walnuts, toasted almonds, truffle honey or artisan honey, fig jam, fresh grapes, dried figs, marinated olives and fresh rosemary sprigs for decoration.
Presentation:
Arrange the three cheeses on a rustic wooden board or elegant slate platter, leaving space between them. Place small bowls of honey and jam around the cheese. Scatter the nuts, fruits, and olives in a visually appealing display. Garnish with fresh rosemary for aroma and color. Serve at room temperature to allow the truffle flavors to fully develop.
Pairing:
Brut Champagne or reserve Cava to start the celebration with bubbles, or an aromatic white wine such as Albariño or Verdejo.
First Course: Truffled Artichoke Cream with Golden Croutons
A smooth and elegant cream that uses our Artichoke Cream with Black Truffle as a base.
Ingredients (serves 6):
2 jars of Valle Trufa Artichoke Cream with Black Truffle, 500ml of vegetable broth, 200ml of liquid cream, 2 tablespoons of extra virgin olive oil, salt and white pepper to taste, fresh bread cut into cubes, white truffle oil to finish and chopped fresh parsley.
Preparation:
In a saucepan, heat the olive oil and add the artichoke and truffle cream. Gradually whisk in the vegetable stock, stirring constantly. Bring to a gentle boil and simmer for 10 minutes. Stir in the cream and adjust the consistency with more stock if needed. Blend with an immersion blender until smooth. Season with salt and pepper to taste. For the croutons, cut the bread into cubes, drizzle with olive oil, and bake at 180°C (350°F) until golden brown and crispy.
Presentation:
Serve the hot cream in preheated bowls. Place the croutons in the center. Finish with a drizzle of white truffle oil and chopped fresh parsley. The contrast between the smooth cream and the crunchy croutons, along with the aroma of the truffle, will create a memorable first impression.
Pairing:
Full-bodied white wine such as barrel-aged Chardonnay or an aromatic Viognier.
Second Course: White Truffle Risotto with Truffled Parmesan
The star dish of the evening, a creamy risotto that combines our White Truffle Sauce and Parmesan with White Truffle .
Ingredients (serves 6):
400g Carnaroli or Arborio rice, 1 jar of Valle Trufa White Truffle Sauce, 100g grated Parmesan with White Truffle, 1.5 liters of hot homemade chicken stock, 1 small finely chopped onion, 150ml dry white wine, 80g butter, 3 tablespoons olive oil, white truffle oil to finish, salt and white pepper to taste.
Preparation:
In a large saucepan, heat the olive oil and 30g of butter. Sauté the onion until translucent. Add the rice and toast for 2 minutes, stirring constantly. Pour in the white wine and let it evaporate. Begin adding the hot stock, one ladleful at a time, stirring constantly and waiting for it to be absorbed before adding more. Continue for 18-20 minutes, or until the rice is al dente. Remove from the heat. Stir in the white truffle sauce, the remaining butter, and half of the truffle-infused Parmesan. Whisk vigorously to create a creamy texture (mantecatura). Let it rest, covered, for 2 minutes.
Presentation:
Serve immediately in preheated bowls. Generously grate truffle-infused Parmesan cheese over the top. Finish with a few drops of white truffle oil. The risotto should have a creamy, flowing consistency.
Pairing:
High-end white wine such as a reserve Chardonnay, premium Pinot Grigio or even a light and elegant Pinot Noir.
Main Course: Beef Tenderloin with Truffled Gorgonzola Sauce
An impressive main course that uses our Gorgonzola with Black Truffle to create a creamy and intense sauce.
Ingredients (serves 6):
6 beef tenderloins of 200g each, 200g of Gorgonzola with Black Truffle Valle Trufa, 300ml of liquid cream, 100ml of red wine, 2 tablespoons of olive oil, 50g of butter, salt and freshly ground black pepper, fresh thyme.
Meat Preparation:
Remove the tenderloins from the refrigerator 30 minutes before cooking. Season generously with salt and pepper. Heat a skillet over high heat with olive oil. Sear the tenderloins for 2-3 minutes per side for medium-rare. Remove and let rest covered with aluminum foil.
Sauce Preparation:
In the same pan, add the red wine and scrape up any caramelized bits from the bottom. Reduce by half. Add the heavy cream and bring to a gentle boil. Stir in the truffled gorgonzola in small pieces until completely melted. Adjust the consistency and season to taste. Add the butter at the end for shine.
Suggested Side Dish:
Creamy mashed potatoes, roasted vegetables (baby carrots, asparagus, Brussels sprouts) or scalloped potatoes.
Presentation:
Place the tenderloin in the center of the plate. Generously coat with the truffle gorgonzola sauce. Serve with your choice of side dish. Garnish with fresh thyme.

A full-bodied red wine such as Rioja Reserva, Ribera del Duero, Priorat or a quality Cabernet Sauvignon.
Dessert: Panna Cotta with White Truffle Balsamic and Red Berries
An elegant and light dessert that incorporates our White Truffle Balsamic in a surprising way.
Ingredients (serves 6):
500ml of liquid cream, 100ml of whole milk, 80g of sugar, 3 gelatin sheets, 1 vanilla pod, fresh red berries (strawberries, raspberries, blueberries), Valle Trufa White Truffle Balsamic, fresh mint leaves.
Preparation:
Soak the gelatin sheets in cold water. Heat the cream, milk, sugar, and vanilla seeds without letting it boil. Remove from the heat, drain the gelatin, and stir it into the mixture until dissolved. Divide the mixture among individual molds or glass cups. Refrigerate for at least 4 hours or overnight.
Presentation:
Unmold the panna cottas onto dessert plates or serve them directly into glasses. Top with fresh red berries. Drizzle delicately with white truffle balsamic vinegar (a few drops are enough). Garnish with fresh mint leaves. The contrast between the sweetness of the panna cotta, the acidity of the red berries, and the complex notes of the truffle balsamic will create a memorable finish.
Pairing:
Sweet wine such as Muscatel, ice wine or a sweet sparkling wine like Asti.
Tips for a Perfect Christmas Dinner
Planning and Timing
Prepare the panna cotta the day before. Make the croutons in the morning and store them in an airtight container. Have all the ingredients measured and ready (mise en place). Allow 30 minutes between each course to enjoy your meal at a leisurely pace. The risotto should be prepared fresh, but you can have the stock hot and the ingredients ready.
Presentation of the Table
Use white or neutral-colored tableware to make the dishes stand out. Decorate the table with candles, pine branches, pinecones, and gold accents. Place name cards for each dish to build anticipation. Prepare different glasses for each wine in the pairing.
Serving Temperature
